It holds an Umbro 750ml bottle fine and there is a little give to it so - and I cannot say this authoritatively having no SIS bottle - I would expect it to fit fine.

I don't think so. I would not recommend this bottle cage for any drink bottle. I bought two and I have replaced them as they don't secure the bottles well enough for my liking. The aluminium is a thin cage. They are cheap and nasty.

Some mineral water bottles fit, they have to be the same diameter as a bike water bottle.

You could probably squeeze a 600/750ml one in there quite securely.

No, a 500ml mineral water bottle is too small and would shake around and jump out on the trails. A 1 ltr bottle would be too big

Yes they will. The fact that they can bend makes them adjustable. But for the cost of a proper bottle I'd buy one!

I would recommend you use a cycling specific bottle. Some retail water bottles will fit but you are never guaranteed a secure fit.

It's just the thickness of the metal. If you aren't doing any seriously rough mountain biking you should be fine with the 5mm (road) option.

answer 2
This is the thickness of the aluminium - moutain biking shakes the cage around a bit more so they make it thicker and stronger. It weighs a little more too, although you will hardly notice.

The 6mm will last longer if you travel over rough terrain.

Either will be fine - 6mm is a bit more robust for trivial extra weight

answer 4
This is the size of the mounting screw's. Your trek will have screws in the mounting holes already, simply take them out and use them to mount the bottle holder.

answer 7
I ordered 2 of the 6mm MTB versions for my daughter's Specilialized MTB bikes and they were fine. I am not 100% certain, but I think the mm size is more about the bolts that attach the cage and as I used the existing ones in the respective frames that was not relevant as I did not need the ones supplied with the cages.

To my knowledge it is the Diameter of the tubing in m\king the holder. 6mm for mountain bikes which makes it more durable for off road 'crashes'

It does depend on how far you are cycling. Most cages will take a 500ml or 750ml bottle anyway. Does your bike have two contact points for two bottles??

Both will fit a standard bottle cage mount, they are simply different sizes for strength and weight changes. If you ride road you don't need a strong bottle cage and you want it to be light weight so go for the 5mm. If you ride off road you need the cage to be more robust and weight isn't as important as reliable parts, go for the 6mm.
