How do I replace worn out sprockets
This would be a great piece of kit, if only it was possible replace the most often used sprockets.... The whole thing comes apart except for the spider on the lower gears, and these will never wear out because they are large and see very little use....

Is it possible to use Ultegra sprockets?

Sorry, you can only purchase complete cassettes rather than individual spockets.

Yes, you can swap out 105, Ultegra or DA as long as you don't chop and change individual sprockets or lock rings from cassettes that are different configs, or 9 to 10 speed etc. So don't use a lock ring from a 11t on a 12t and don't try and be clever and take the 14t sprocket off a 12-25 and put it on an 11-23 etc. SOMETIMES the ramping is different and they won't line up properly.

105 replacements
I want to go from a 11-25 to a 12-27 cassette.
It is 105 do I need to replace the chain as well.

This depends on how much slack you have in your chain at the moment. If you are running with some slack you might be fine but otherwise you need to add a couple of links to be sure that you can use the full range of gears.
