These brake pads have a thread that goes the full length of the post and are tightened by a nut that goes onto the end of this thread. They suit V brakes or cantilever brakes requiring a threaded post. They do not suit cantilever brakes where the brake pad has a smooth post and is attached to brake arm by tightening an eye bolt against the side of the post.
My Tektro Oryx centre pull cantilever brakes require threaded pads but confusingly the post on the original pads is smooth for most of its length and only has a thread on the outermost part. Presumably these may fit some non threaded eye bolt style cantilever brakes as well.

I have got these to work with a Tektro Oryx central pull cantilever.
But the Oryx is I think different from other cantilever brakes in that it allows threaded pads similar to v brake pads to be used. I think other cantilevers may need a different type of pad.
Also, the radius of the pad is for 26 inch and may not suit a 700c wheel.
I'd say check the brake manufacturers product descriptions for what type of pad can be used and see if they are a match.

My old shimano cantilevers required the pads to have an unthreaded post to mount them. These pads have a short threaded post. So depending on your cantilevers you could rule them out.

Depends on the mountings. I've got cantis, Avid Shortys, and these fit.

This depends on the brake system you use. You may find that you can use V-brake pads on more modern cantilever brakes but most cantiler brakes will use post type blocks such as these:
