I have a Tiagra chain set on a Giant Defy 1 with a CN-HG53 chain. Will the HG-73 chain be suitable?

The main difference is the finish, corrosion resistance and general quality. The 73 is a nine speed chain and I think the 53 is as well, so you should be ok.

HG93 - has the silver finish on only the outer plates, dull grey on the inner
HG73 - dull grey finish on inner and outer plates
HG53 - dull grey outer plates, that horrid browny finish on the inner plates

Yes, all 9 speed chains are compatible, hg73 just has a better finish, and is probably lighter, real world difference is minor but I'd get hg73
